Intrinsic factors in meat products counteracting botulinogenic conditions

Spores ofClostridium botulinum occur in soil, dung and dirt, materials which are normally present on the skin of living pigs entering the slaughter-house. After slaughtering, the surface of the pigs may become contaminated with these materials, the chances and the level of contamination depending on the hygienic conditions in the factory.
