Análisis de riesgos en la seguridad alimentaria: una revisión

The process of Risk Analysis has of late called the attention of food companies, for they need to come up with means to develop safer food every day. Besides the technical knowledge involved in this kind of food processing, there is a need to search for information asout the agents and the impact they may have on people's health. This work aims, then, to present the concepts o! risk, the history and the stages of Risk Analysis, and its interaction with the process of food security. Additionally, this paper points out the limitations, and gives some recommendations for the application of Risk Analysis in relation to food securty.
