Calidad microbiológica de los productos cárnicos de las áreas de salud de Alcoi y Xátiva durante el trienio 1993-1995

559 meat products have been analised at Public Health Laboratory of Alcoi during 1993-1995. 239 samples (42.7%) exceeded Spanish legislation for ground meat, being «Mesophilic aerobes» that parameter with higher degree of non-fulfilment (27.6%). Both ground meat and hard pork sausage had biggest rates of non-fulfilment. Salmonella sp. has been that pathogenic microorganism found more frequently, becoming to 18.2% in hard pork sausage. Salmonella typhimurium was more isolated serotype. E. coli exceeded 500 microorganism/g in 10.4% while Listeria monocytogenes and S. aureus enterotoxigenic were isolated in 6.6 and 3.9%.
