The present invention discloses a kumquat cake production method, belonging to the technical field of food production. The kumquat cake is prepared by the following steps: making kumquat fruits into juice; mixing the kumquat juice with passion fruit juice evenly; then adding the mixture to boiled malt syrup which is added with carrageenan and potassium sorbate; stirring the liquid mixture evenly; putting the liquid mixture obtained by a reaction into a mold; cooling the mold to solidify the liquid; baking the obtained product until the moisture content of the product is 15% to 20%, thereby obtaining the kumquat cake. According to the present invention, a new technology of low-temperature air-drying concentrate solidification is used to produce the kumquat cake, and the original flavor and the nutritive value of kumquats are maintained, so that a new product is provided for widening the kumquat market, and the types of kumquat processing products in the market are enriched.
