Inspection and analysis of the quality and chemistry index of cooking oil.

[Objective] To investigate the current situation of the sanitation of Grain and Oil Foods in catering industry and market in Khorchin district of Tongliao,and to defend the consumers' physical health.[Methods] 28 stores of grain and oil,38 restaurants,dining halls of 5 construction fields were investigated,and the acid value and peroxide value of 71 samples were evaluated.[Results] There were serious problems in the oil in bulk without any marks.43 restaurants can not offer any certification and laboratory sheet for oil they have bought.Only 2 of 28 stores of grain and oil can offer certification.Among 50 samples of packaged salad oil,only 10% has complete marks,38 had got over proof in acid value,and the reject ratio was 76% and the total rate up to standard was 83.1%.[Conclusion] It is necessary to take measures such as strenghthening Food Sanitation Law,propagating the laws to improve the sanitation condition of oil in Tongliao,strengthening supervising and monitoring in catering industry to ensure the consumers can buy and consume qualified cooking oil.
