Monitoraggio microbiologico delle condizioni di lavorazione in un macello bovino

In a cattle slaughterhouse in compliance with Directive 64/433/EC, with an output of 250 UGB/ week, the slaughter process was monitored on ten days of different weeks in order to evaluate the general hygienic conditions of production. N. 50 carcasses were examined at four sites (neck, brisket, flank, rump) by the wet-dry double swab technique for the presence and number of total plate count, Enterobacteriaceae, coliforms, coagulase positive staphylococci, Salmonella spp., and L monocytogenes. Moreover numbers of TPC and Enterobacteriaceae were determined for the surface of 9 equipments and apparatus on four days of different weeks. Salmonella spp. and pathogens were never isolated, but results demonstrate slaughterhouse hygienic conditions should be improved to fulfill the requirements of Decision 47½001.
