Influence of hydrolysis duration on the sunflower protopectin degradation at the flash extraction method has been studied. It's shown that the control of hydrolysis time lead to optimized the main exploitation parameters of pectin product by enriching that with liner homogalacturonan chains, which allows producing a product with desired physicochemical characteristics.
