Research on the Enzymatic Property of the Inulinase Produced from 1 Strain of Bacillus polymyxa Mace

[Objective] The enzymatic property of inulinase from one strain of Bacillus polymyxa Mace was studied.[Method] One strain of Bacillus polymyxa Mace was cultured,the cells of the strain were broken with ultrasonic wave method and the crude extracts of the inulinase from the bacteria were obtained.The enzymatic property of the crude inulinase was researched.[Results] The best enzyme production of the strain was at about the 40th hour when it was cultured in shake flask,at that moment,the rate (I/S)of the activity of enzyme of intracellular inulinase to sucrose was 0.218 7(less than 10),showing its being the activity of exonuclease.The optimum pH and temperature of the enzyme reaction was 45 ℃ and 5.0,respectively,under which condition,the maximum activity of inulinase was up to 102.81 U/L.[Conclusion] The inulinase produced from this Bacillus polymyxa Mace strain was exonuclease and the basis of further in-depth and systematic study on the enzymatic property of inulinase was laid through the experiment.
