Durabilidad de morcilla cocida en diferentes formas de envasado: Shelf-life of cooked blood sausage in different packings

El objetivo del trabajo fue determinar la durabilidad de una morcilla cocida envasada en diferentes envases. El envasado fue a granel en caja de carton, a granel en bolsas de polietileno de alta densidad, al vacio, al vacio repasteurizada y en tripa impermeable Naloflex. Se estudiaron cinco lotes y se caracterizaron al inicio y final del estudio con evaluaciones fisicas, quimicas, microbiologicas y sensoriales. Las vias de deterioro y rechazo fueron la acidez y rancidez, con la presencia de exudado lechoso para las empacadas al vacio, la rancidez para las repasteurizadas, presencia de levadura en las envasadas a granel y perdida de la calidad general en tripa impermeable. Las durabilidades fueron: a granel de 11 a 12 dias, al vacio 91 dias, al vacio repasteurizada 153 dias y en tripa impermeable Naloflex 249 dias. ABSTRACT Shelf-life of cooked blood sausage in different forms of packed The objective of the work was to determine the shelf-life of a cooked blood sausage packed in different packings. The packing was in bulk in cardboard box, in bulk in bags of high density polyethylene, vacuum packed, vacuum repasteurization and non-permeable casing “Naloflex”. Five lots were studied and they were characterized at the beginning and end of the study with physical, chemical, microbiological and sensory evaluations. The ways of deterioration and rejection were acidity and rancidity, with the presence of having perspired milky for those vacuum packed, the rancidity for the repasteurized, yeast presence in those bulk packed and loss of the general quality in non-permeable casing. The durabilities were in bulk of 11 to 12 days, vacuum packed 91 days, vacuum repasteurized 153 days and in non-permeable casing “Naloflex” 249 days.  Keywords: shelf-life, durability, cooked blood sausage, repasteurization, vacuum packed, non-permeable casing.
