Study on in Vitro Activity of Polyphenols in Jujube Fruit

The content of polyphenols in jujube fruit was measured by using the ferrous tartrate method.The in vitro antioxidant activities of phloroglucinol and pyroeatechol in jujube fruits were determined by using chemiluminescence analysis method.The results indicated that phloroglucinol and pyroeatechol in the jujube fruits had obvious inhibition function to.OH and NO2-.It provided new research directions and theoretical basis for the development and utilization of jujube products with health care function.
