Disclosed are a solid beverage containing ginseng and the preparation method thereof. The solid beverage is composed of the following raw materials in parts by weight: 10-15 parts of ginseng, 3-7 parts of pumpkin powder, 8-12 parts of fructose, 8-16 parts of resistant dextrin, 50-80 parts of erythritol, 2-6 parts of pectin, and 0.05-0.2 parts of ginseng flavouring. The preparation method thereof comprises the following steps: the ginseng is extracted with water, filtered, dried under a reduced pressure after concentration, and the obtained dry paste is pulverized and the prepared ginseng powder is used in the following steps; sieved pumpkin powder, pectin, fructose, erythritol and resistant dextrin are added to the above-mentioned ginseng powder and mixed, then spraying into said mixture the ginseng flavouring once said flavouring is dissolved by means of a wetting agent, and thus the mixed powder is obtained; and the mixed powder is granulated, sieved, dried and sized, and dry particles are obtained. The beverage has a pleasant fragrance and its taste is sour, sweet and tasty.
