Selection and Evaluation of Biochemical Parameters for Anti- alcohol and Hepatoprotective Effects of Foods and Traditional Medicines

Various alcoholic beverages are widely consumed in the world. Moderate consumption of alcohol has shown some positive health effects, but excessive consumption of alcohol may result in serious health problem. Traditionally, people think that some foods and traditional medicines could relieve drunken symptoms. However, this is lack of scientific evidence. To evaluate anti-alcohol and hepatoprotective effects of natural products, some experimental parameters were selected and evaluated in this study. Six biochemical parameters could be used based on function, sensitivity and stability, including concentrations of ethanol and acetaldehyde in blood, alcohol dehydrogenase and aldehyde dehydrogenase activities of liver/blood, and ferric-reducing antioxidant power and trolox equivalent antioxidant capacity of blood.
