Carnosine as a Putative Antioxidant in Usage Against Liver Disease

Abstract This chapter discusses the biological role of carnosine on various liver injury models including ischemia-reperfusion, intoxication due to acetaminophen, thioacetamide, carbon tetrachloride, cadmium, lead and N -diethylnitrosamine, sepsis, alcoholic, and nonalcoholic fatty liver. Its membrane stabilizing, pH buffering, metal ion chelating, reactive oxygen species and carbonyl scavenging, antiglycating functions enable carnosine to be used as an efficient antioxidant against liver disease.
