Computer vision technologies to assurance the quality, safety and traceability of food products: a review

Computer vision is not an end unto itself! It represents a piece of the quality, safety and traceability universe. That universe is driven by data related to products and process . Computer vision has attracted much research and development attention in recent years and, as a result, significant scientific and technological advances have been made in quality inspection, classification and evaluation of a wide range of food products. In this day we will present some practical experiences (recent research and our own experiences) part of the technological potential of computer vision for the food industry.
