The invention provides a processing process for sushi menhaden. The processing process comprises the following steps: step (1) carrying out first time of seasoning on fillets by using a first-time seasoning base solution; step (2) carrying out second time of seasoning on the fillets by using a second-time seasoning base solution; step (3) carrying out third time of seasoning on the fillets by using a third-time seasoning base solution; step (4) seasoning fish eggs by using a fish egg seasoning solution; step (5) adding glutamine transaminase into the seasoned fish eggs; sufficiently mixing to obtain the fish eggs seasoned by adding an enzyme; carrying out pressing and molding processing on the fillets which are subjected to the third time of seasoning and the fish eggs seasoned by adding the enzyme to obtain a sushi menhaden semi-finished product; step (6) adding a special seasoning solution into the sushi menhaden semi-finished product to obtain the product. According to the sushi menhaden produced by the processing process, the fishy smell is removed and the fish eggs are full; the fish eggs are crispy and delicious when being broken by teeth and the aftertaste has the slight rosemary taste; the flavor of the fillets can be kept very well and the sushi menhaden is suitable for the tastes of broad consumers.
