Studio della componente polare di oli di oliva vergini del Levante ligure con elaborazione multivariata dei risultati

Polar compounds of virgin olive oils from East Liguria were studied. The study was carried out using a model which had been previously built by applying chemometric methods (PLS) to the data obtained from the HPLC-DAD analysis of polar compounds of virgin olive oils obtained in laboratory with olives from the same region and of the same cultivar (Razzola). In this study, the application of the PLS model was extended to oil samples which were produced by traditional oil milling. In a season which was characterized by abundant rainfalls and wide spreading Dacus oleae infestation, PLS model allowed to confirm that the state of health of olive was extremely bad. Moreover, it showed a clear improvement of the state of health of olives exposed to anti-Dacus treatment only when olives were properly collected. Thus it was confirmed that even in these conditions the PLS model is very useful in order to predict with a good degree of accuracy the state of health of the employed olives and the shelf life of the oil itself.
