Abstract The objectives of this research were to develop a measuring and evaluating method for fruits which characterises its integrity by the characteristics of the transmitted ultrasonic wave. Velocity delivers information about the flesh's stiffness. Collapse of the tissue structure on apple and pear slices manifested in a change of the spectral attenuation.
