Palavras-chave: Citrullus lanatus, analise sensorial, qualidade pos-colheita. ABSTRACT - In the state of Tocantins, the culture of watermelon is the main Curcubitacea cultivated. Despite the expansion of culture in state in recent years farming has been limited by disease, and those caused by viruses, causing losses in production. In this context, the development of genotypes with high levels of resistance or tolerance can help to reduce the costs of crop production. Given these aspects, the objective was to evaluate the quality postharvest fruit sensory and families obtained from watermelon four backcrosses. The work was conducted in Universidade Federal do Tocantins. Analysis were used in fruit with commercial standard obtained from 12 families and the watermelon cultivar Commercial Crimson Sweet. For the physical-chemical evaluations were selected two fruits, were studied: acidity, solid soluble and internal color of the pulp. The sensory analysis of fruits watermelon was made through affective test with 30 raters. Hedonic scale was used for five points, ranging from like extremely dislike very much to look at the features Overall, commercial acceptance and flavor. In general, some families behaved satisfactorily about the physico-chemical and sensory showing can advance in the breeding program, therefore, are in good commercial characteristics and with resistance to major viruses.
