Differenzenmatrix: Ein Kriterium zur Charakterisierung der Präzision bewertender Prüfungen mit Qualitätszahl in der Sensorik

Not only for meat products the DLG (German Agricultural Society) -testing scheme is the most widely used concept for sensory analyses in food quality competitions. Concerning the high importance of the DLG-food Olympic games it is necessary to characterize the precision of sensory scores given by experts. For that purpose matrix differences, i.e. comparison of each tester with every other tester judging one sample, seem to be a valuable statistical tool as it was shown from data derived from sensory seminars. For the tested sausages the 95%-quantils of the matrix differences lied around one score on the 5-points-testing scale. The median of the differences is approximately 0,4 points. This values characterize the precision of sensory analyses using DLG-experts and the DLG-testing scheme.
