Changes in Polyunsaturated Fatty Acids and Other Fatty Acid Contents of Animal Products and the Influencing Factors

Meat, eggs, milk products are important sources of monounsaturated fatty acids ( MUFA) and polyunsaturated fatty acids (PUFA). So, enrichment of unsaturated fatty acids (UFA) in meat and meat products, eggs, milk, and milk products can improve national health level and life quality of human. Quality of the animal products enriched with PUFA, and some factors affecting PUFA and other fatty acid contents, such as diet composition, genotype, gender, and age of the animal were reviewed in this paper. The information is helpful to develop related technologies and products.
