It is for the first time that economic-biological features of different genotypes of Kazakh White-Head cattle dams have been studied under the conditions of Southern Urals. The animals’ beef performance, slaughter qualities, morphological structure of the carcass, correlation of the natural-anatomic half-carcass parts, carcass grade structure, chemical composition and biological value of beef and chemical composition of the longitudinal spinal muscle have been studied from the comparative viewpoint. The studies were conducted under the conditions of the LLC «Dimitrovsky» breeding farm, Orenburg region. It is ascertained that the most effective use of the economically profitable qualities of animals of the desired type can be achieved by intensification of young cattle growing and fattening of the first-calf heifers for meat, which in its turn is to lead to enhancement of beef production efficiency and that of beef cattle breeding in general at 13.7 and 19.2% correspondingly.
