Hongos y levaduras: Fábricas de lipasas

Lipases are enzymes with the capacity of catalyzing triglyceride hydrolysis reactions; they are used in many processes in the food industry, energy production, pharmaceutical catalysis, etc. Given the need to satisfy the current commercial and industrial demand of lipases, different strategies have been developed to study them and their applications. Because most of the bacterial species used for the production of lipases are pathogenic, efforts have been made to find safe alternative systems that could be used the different processes in which lipases are involved. Thus, lipases from fungi and yeasts have won high attention. In this review we intend to cover the general and production characteristics of currently utilized lipases from various fungal microorganisms, in order to determine the existing alternatives for the industrial biotechnological processes that demand this type of enzymes
