Production of calcium supplemented fruit juice beverage by dispersing calcium hydroxide slurry in low temp. pasteurized juice flow

PURPOSE: To solve problems of precipitation of Ca salt caused by pasteurization or aseptic processes and to obtain a tasty beverage having a desired Ca level by uniformly dispersing a calcium hydroxide slurry in a low temp. pasteurized juice flow. CONSTITUTION: A low temp. pasteurized fruit juice flow containing ≤0.12wt.%, preferably 0wt.% soluble calcium and 0 to 4wt.% citric acid is prepared. A calcium hydroxide slurry preferably containing 2 to 16wt.%, and most preferably 4 to 12wt.% calcium hydroxide Ca(OH) 2 is prepared. This slurry is uniformly dispersed in the low temp. pasteurized juice flow to obtain the beverage of the purpose containing 0.10 to 0.20wt.% soluble calcium and 45wt.% fruit juice, having a solid content of 2 to 16 Brix degrees and pH≤5.0, preferably ≤4.5pH.
