The invention discloses an apple pomace bacterial protein production method. In the method, a compound bacterial agent is inoculated in a solid culture medium taking apple pomace as basic materials, and a bacterial protein feed with over 30 percent of protein can be obtained. The apple pomace bacterial protein production method comprises the following steps of, firstly, culturing bacteria: inoculating spergillus niger CCTCC NO:M209125 in a bran culture medium, culturing for 2-5 days at the constant temperature of 20-35 DEG C, air drying the culture, inoculating Candida tropicalis and beer yeast in a maize powder medium, culturing in a mixing way for 2-5 days at the constant temperature of 20-35 DEG C, air drying the culture, and mixing the two cultures to form the compound bacterial agent; secondly, preparing apple pomace raw materials; thirdly, steaming; and fourthly, inoculating and culturing: inoculating the compound bacterial agent in the steamed apple pomace raw materials, uniformly stirring, moving the culture into a fermentation tank when the raw materials are grey, culturing the culture in a ventilation way, and finishing culture after 24-72h.
