This paper describes the way in which companies in the food sector must adopt a series of legal standards for normal operation. In this study are taken as reference the compliance of Decree 3075 of 1997 and Resolution 2674 of 2013 in warehouses of finished product. The case study was developed in the company Pepsico Foods in which from the evaluation of previous audits conducted by the regulatory body of the District Department of Health of Bogota and internal audits of application of standards for risk assessment in food safety through the American Institute of Baking -AIB; They have identified a number of potential risks that may affect the security and safety of products. For this, an array of legal compliance, which identified the need to correct and make traceability in the proper functioning of the winery and avoid an unfavorable concept causing possible sanctions or even the closure of the warehouse activities are developed. It's study ends with the construction of the documentation listed in the legal requirements for storage warehouses of finished product. The next step will socialize with each process and then enforcing any legal requirements defined in the matrix.
