Determination of optimal temperature and pH. The effects of temperature a and pH b on enzymatic activity were determined by the standard dehydroascorbate reductase assay. The reactions were initiated by adding DHA and recorded for 5 min with temperature ranges from 4 °C to 55 °C. Sodium phosphate buffer (100 mM, pH 6.2–7.8) and Tris-HCl buffer (100 mM, pH 8.0–9.4) were used to observe optimal pH.
