Manual construction of combinatorial resin bound tripeptide library (one peptide on one bead) and screening to find antioxidative peptides

1999
Several peptides have been shown to have antioxidative activities against peroxidation of lipids and fatty acids. As the formation of peroxides or radicals from polyunsaturated fatty acids can in some cases be fatal and may be responsible for aging, antioxidants are indispensable as food additives. Organic compounds, such as butylhydroxytoluene (BHT), are widely used in relatively high concentrations. Recently antioxidative peptides have been isolated from digests of soybean protein [1], from which a pentapeptide was selected as a lead compound and resulted in the discovery of a tripeptide, PHH, that was found to be highly antioxidative [2]. In the present study, we have systematically constructed and screened all possible tripeptide libraries, as tripeptides seemed to be the minimum requirement for practical antioxidative action.
