The Effect of Glucose on Electronic Taste Analyzer

Abstract. Instrumental taste measurement is in the center of attention both for sensory experts and sensor developers. However, the measurement of sweetness in a hard task. Our work reported here presents the measurability of glucose with an electronic taste analyzer. Our results showed that the system is sensitive for pure glucose but in a very “un-monotonic” way. However in the presence of other components a monotonic change in some sensor signals could be observed. Our opinion is that these sensors are not measuring the glucose itself but a kind of masking effect covering the other components.
