This paper reviews the main advances and current status of descriptive vocabulary development and selection of standard references in sensory analysis. It is underlined the importance of this stage in the sensory description. Moreover, this step is identified as one of the most frequently faced methodological problems, together with sample presentation and selection of adequate assessors. Finally, some terms development procedures are explained, as well as several examples of reference materials related to sensory descriptors to aid their comprehension by the panel.
