PURPOSE: A manufacturing method of a semi-dried chicken jerky comprising the chicken flesh is provided to manufacture a jerky out of the crushed chicken flesh, and to soften the texture of the jerky. CONSTITUTION: A manufacturing method of a semi-dried chicken jerky comprising the chicken flesh comprises the following steps: crushing the chicken flesh after removing bones using a chopper; and adding jerky seasonings after heating the chicken flesh, filling a casing, and drying to make the jerky. The chicken flesh is heated for 30 minutes in 80 deg C of water before crushing. The drying process is performed for 30 minutes in 50~60 deg C.
