Abstract The purpose of this study was to establish the effects of extrusion on rheological and physicochemical properties of sesbania gum at a constant temperature of 80 °C. Rheological data showed that both non-extruded sesbania gum and extruded sesbania gum samples exhibited a non-Newtonian pseudoplastic flow behavior.
