Aeromonas genus in recent years was often investigated and several scientific papers were issued. In the present review the role of foods as possible carrier of Aeromonas spp., as well as the effect of usual preservation techniques, the virulence factors and the medium to isolate and to select bacteria belonging to this genus are elucidated. A particular attention has been paid to Aeromonas hydrophila often reported as cause of foodborne diseases.
