The present invention relates to the field of food, in particular to a method for its preparation pepper oil. The present invention provides a pepper flavor oils, including pepper oleoresin and edible oil; wherein the mass ratio of pepper oleoresin and edible oil is 1: 5 to 1:25; pepper oleoresin contains 45% to 48% of the pepper alkali and 24% to 28% of the pepper oil. The present invention further provides a preparation method, in particular: to take the mixed oil and pepper oleoresin, pepper give crude oil, emulsified homogenized formulation, that is, too.
