Enzymes are proteins that act as catalysts with living cells.  The usage of enzymes in industrial processes is happening to deliver its promise. Enzymes have high catalytic rates. Enzyme are work in aqueous solution. The sources of enzyme are animal, plant and microbes. Enzymes are act as bio-catalyst for a wide variety of chemical reactions. Amylase is useful enzyme in food industry. Amylases are enzymes which hydrolyze starch molecules to give different products including dextrin and progressively smaller polymers collected of glucose units. This enzyme is break down starch or glycogen convert into sugar. Starch degrading enzymes have light-emitting diode to enhanced use of amylase in various industrial processes. The important objective of this research was to isolate, production, characterization, optimize amylase enzyme using bacterial strain isolated from sugarcane soil
