Nutrient Content and Health Benefits of Insects

Abstract In this chapter, we will summarize the importance of exploring insects as a source of sustainable nutrients for the human population. Subsequently, we will provide a compilation of data on nutrient content from various species of insects specifically, proximate analysis, mineral content, amino acid, vitamins, and fatty acid composition. This data not only provides nutritional information, but also adds to the body of knowledge for insect protein functionality of which there is currently minimal published work. This chapter also identifies functional properties associated with insect protein and successes as well as challenges in utilizing insect protein as a functional food ingredient in baked goods, snack products, and meat analogs. It also highlights the importance of continued research in this area to further expand insect ingredient utility in the United States and European countries.
