The invention discloses an ultrasound enzyme-assisted solanesol extracting method, which comprises the following steps of: firstly, degrading cell walls and cellulous between the cell walls of a potato serving as a raw material by using cellulase; secondly, hydrolyzing solanesol in a binding state by using lipase; and finally, extracting the crude product of the solanesol by microwave extraction. Compared with the conventional grinding wall-breaking method, the method in the invention greatly reduces reaction time, overcomes the shortcomings of the traditional process which adopts alkali for saponification and causes low yield due to the degradation or isomerization of the solanesol and environment pollution due to difficult alkali liquor treatment; and compared with prior art, the method in the invention has higher efficiency and less waste liquid emission and thus, is environmentally-friendly green production technology.
