Procurement strategies in the coffee industry: Cases of local coffee roasters in Paraná state

Abstract This chapter addresses a discussion on the procurement organization and strategies of small coffee roasters. The aim is to offer a description of how small coffee roasters procure green coffee in suitable conditions to produce their blend, involving transaction and measurement costs. Considering market change, modifications in coffee producers’ environment, and the increase of competition in local markets, we discuss how coffee roasters have (re)defined their procurement strategies toward efficiency in Parana state, South of Brazil.
