Valutazioni comparative sulla conservabilità di Sparidi allevati

In this study 75 specimens of 5parus ouroto, Diplodus sargus, Dentex dentex x Pagrus major (Pantice), Pogrus major and Dentex dentex, were analysed for the shelf-life assessment, during +2°C storage. The assessment regarded the application of Quality Index Method, bacteriological analysis, the evaluation of muscle ATP consumption, pH, dielectric properties, and the determination of proteolytic activity of the sarcoplasmic fluids. Sparus ouroto was the specie that showed the most stable sensorial and bacteriological characteristics as well as a most regular ATP consumption; it was followed by Dentex dentex, Diplodus sargus, Pantice and Pagrus major. These differences have shown the importance to integrate the shelf-life modelling techniques with more specie-specific parameters. Finally, the Authors drawn attention to the necessity of using an analytical integrate approach regarding the hygienic and qualitative aspects in the context of the introduction of "alternative" reared species.
