SYNTHESIS OF ALKYL 2-CYANOPROPIONATES AND MEASUREMENT OF THEIR SPREADING COEFFICIENTS ON 1% AQUEOUS CASEIN AND ON WATER.

Abstract : Methyl, n-butyl, and n-heptyl 2-cyanopropionates were synthesized by hydrogenation of the corresponding alkyl 2-cyanoacrylates (alpha-cyanoacrylates). Measurements of their spreading coefficients on 1% aqueous casein and on water show that they are similar to the alykl 2-cyanoacrylates and the alkyl cyanoacetates in their spreading characteristics.
