If the amylose fraction of starch is degraded by
glucosyltransferases, one or several turns of the
amylose helix are hydrolyzed off and their ends are
joined together, thereby producing cyclic oligosaccharides
called cyclodextrins (CDs) or cycloamyloses
(CAs).
