Complete carcass examination within the framework of the risk based meat inspection according to Regulation (EC) 854/2004.

Through Regulation (EC) 854/2004 the official meat inspection has been harmonized on an EU-wide level. This overview should give a synopsis of the complete carcass examination of domestic bovine animals under and over six weeks old, domestic sheep and goats, domestic solipeds and domestic swine as well as wild game. For certain animal species the complete carcass examination can be simplified if additional requirements are fulfilled. These requirements as well as specific features for all animal species will be illuminated. This overview should contribute to the standardisation of the official controls and thus ensure consumer safety.
