The Anatolian, which is old as the world history, has many different cultures. As a natural result of this, different lifestyles and demands have emerged. Food cultures different from the interaction of these cultures have been born. Lifestyle have changed over time and thus restaurants have become necessary. Due to meeting this need, restaurants have increased and diversified. This study is a compilation study carried out with the aim of identifying the centuries-old restaurants operating throughout our country, transferring them to written sources through research, and promoting them within the scope of sustainable tourism. Within the scope of the study, restaurants operating in our country have been researched from the internet and written sources on a provincial and regional basis, and are listed by year of establishment. Among the restaurants listed, those with a period of century or more were selected and their sources were scanned. The data obtained were compiled. In this study, seventeen restaurants (in Turkey), which has emerged due to changing lifestyles and has been serving for a century, has been considered and evaluated.
