Reestructurados de pescado: Una buena alternativa de proteína utilizando especies de bajo valor comercial o recortes

espanolEn este trabajo se describen los productos reestructurados de pescado, centrandose en las diferentes estrategias y especies de peces utilizadas; considerando que ademas de los productos analogos de pescado, tambien se elaboran otros reestructurados crudos o emulsionados cocinados con la inclusion de ingredientes aglutinantes como enzimas (transglutaminasa microbiana), harinas, proteina de suero, alginatos y gomas (Konjac y carboximetilcelulosa) los cuales son sometidos a diferentes procesamientos termicos, que alteran las caracteristicas mecanicas, fisicoquimicas, microbiologias y atributos en general. Finalmente se revisa el efecto de la fortificacion con antioxidantes en la vida de anaquel de los productos alimenticios reestructurados. Despues de la revision se pudo concluir que los productos reestructurados de pescado representan un nicho para dirigido al consumidor contemporaneo, el cual no solo exige alimentos saludables con atributos especiales, sino tambien que provengan de procesos amigables con el ambiente. EnglishThis work describes the restructured fish products, focusing on the different strategies and species of fish used; considering that in addition to the fish analog products, other raw or emulsified restructured products are also prepared cooked with the inclusion of binding ingredients such as enzymes (microbial transglutaminase), flours, whey protein, alginates and gums (Konjac and carboxymethylcellulose) which are subjected to different thermal processes, which alter the mechanical, physicochemical, microbiology and attributes in general. Finally, the effect of antioxidant fortification on the shelf life of restructured food products is reviewed. After the review it was concluded that the restructured fish products represent a niche for the creation of new presentations that will expand the range of marketing possibilities aimed at the contemporary consumer, which not only requires healthy foods with special attributes, but also that they come of environmentally friendly processes.
