Method for enzymatic preparation of antioxidant compounds. The invention provides a method of hydroxytyrosol esters represented by the formula I, wherein R {1} selected from the group consisting of radicals OCO and OCOalkenyl, comprising the following steps: a) preparing an enriched in hydroxytyrosol from olives, olive pulp, olive leaves, or liquid or solid residues of the pressed olive oil extract, b) reacting the extract prepared in step a) with an alkyl or alkenyl source in the presence of a lipase or esterase enzyme and, c) optionally purifying the hydroxytyrosol ester of the reaction mixture obtained in step b); and a dietary supplement comprising an extract containing said hydroxytyrosol esters.
