The invention discloses a maca extract, maca liquor of the maca extract and a maca liquor preparation method. The maca extract disclosed by the invention is extracted by the following ways: a. grinding maca; b. adding obtained maca powder to an extraction tank, soaking the maca powder in an acid solution with the weight being 4-8 times the total weight of the maca powder and with concentration being 0.3-0.8% for 1h, then heating the solution to 60-80 DEG C for 1-3h, filtering and collecting an extraction solution; c. adding filtered powder slag to water with the weight being 2-6 times the total weight of the powder slag, heating to 55 DEG C, regulating pH value to 5.0, adding complex enzyme with weight being 0.5-1.5% of the weight of powder slag water, wherein the weight ratio of cellulose to amylase in the complex enzyme is 2 to 1, enzymatically hydrolyzing for 2h, filtering and collecting enzymatic hydrolysate; d. combining the obtained extraction solution and the enzymatic hydrolysate, regulating pH value to be neutral, heating to 70-80 DEG C, adding 0.2-0.6% of a clarifying agent and clarifying for 1h, then finely filtering so as to obtain a fine filtrate; e. decompressing and concentrating the obtained fine filtrate; and f. spray-drying the obtained concentrate, so that the maca extract is obtained.
