Research of functional characters of Kefir milk

To investigate kefir supernatants(KS),artificially acidified milks supernatants(AAMS),yogurt supernatants(YS) on inhibitory the effect of intestinal pathogenic bacteria,cholesterol-reducing and immunity-reinforcing.Compared with AAMS,YS,KS had great effective inhibition of Escherichia coli and Bacillus subtilis,Staphylococcus aureus.kefir supernatants can availably restrain the reproduction of E.coli,and its inhibi-tion can be maintained 8～24h;AAMS had determinate inhibitory action,but the effectiveness of bacteriostasis could hold 8 days;YS had no significant depressant effect on E.coli.To mice for animal models,oral administration of milk kefir for the experimental group,skimmed milk as a control group.The results showed that: Compared with the control group,the mean values of experimental group for mice serum TC,LDL concentrations decreased significantly(P0.05),serum LDL,HDL content can be effectively regulated.The risk of atherogenic index(TC/HDL) of the test mice is lower than control group.Kefir milk can significantly improve the normal mice and the high cholesterol test mice serum antibodies IgG levels to 13.7 mg/g(P0.05).These data suggest that drinking milk kefir can generate obvious prebiotics role on host.
