Analysis and evaluation on nutritive composition and quality in the muscle of Spinibarbus caldwelli (Nichols)

Nutritive composition in the muscle of one tail Spinibarbus caldwelli(Nichols) were tested and analyzed through the common methods.The result showed that the contents of crude protein,crude fat,moisture and crude ash in the fresh muscles were 19.50%,1.91%,74.47% and 1.72% respectively.The muscles all contain 17 amino acids,the total amount of which was 66.19% (mass fraction,dry weight) and 7 essential amino acids for human(Tryptophan not included) accounting for 25.33%,holding 38.27% of total content of amino acid.It was apparent that the constituent ratio of the essential amino acids in general accorded with the FAO/WHO standard.The essential amino acid index(EAAI) was 56.61 and the content of 4 kinds delicious amino acids was 26.57%(dry weight).The contents of EPA and DHA in fatty acids were 0.72% and 3.09% respectively.The microelement ratio in the muscle of Spinibarbus caldwelli(Nichols) was reasonable.
