Physicochemical Properties and Hypolipidemic Function of Levan and its Partial Hydrolysate

Levan of Str. salivarius and partially hydrolized levan(PHL) suppressed the elevation of serum lipid levels in rats and hamsters. Viscosity of PHL having molecular weight (M) less than 104 was low, and intrinsic viscosity [ η ] of PHL was well-approximated by the equation [η]=KMα. In hydrolysis of levan, the rate could be calculated by increase of reducing sugar and the activation energy was almost constant at pH 3.0 to 5.0 and the frequency factor was pH dependent.
