The ice cream market in Ecuador has been characterized by the presence of classic flavors that have been determined by the market of people consuming these products, the demand for sugar-free products as well as supply has been growing significantly in recent years in Ecuador, this due to the tastes and restrictions that a company is acquiring , which over time are different from those that have already prevailed for years, to this we must add that there are certain types of people who seek to take care of their health or who have a disease which influences the diet of these people, such as diabetes. The objective of this study is to create a line of healthy ice creams based on exotic fruits, for which in the first chapter will investigate what is ice cream, its characteristics and types, the procedure to perform ice cream, diabetes disease, uses of sweeteners in the industry and on the exotic fruits Ecuadorians, to gain a greater knowledge of the product to be made. On the other hand, chapter two carried out an analysis of the environment, where a review of the most recognized ice cream parlors in Quito and its offer of sugar-free ice cream was carried out, as well as collecting information from doctors, specialists in the area of ice cream and patients who have diabetes, information that is necessary for the creation of the ice cream line. In the third chapter the formulation, caloric index and procedure of ice cream was carried out, this in order that at the time of experimentation and subsequent validation a quality product is obtained, which not only meets the main objective of this titration work, but also that it possesses a great taste and texture.
