The dried vegetables sauce is prepared from the following components in parts by weight: 146-152 parts of dried vegetables, 9.3-10.3 parts of dark soy sauce, 4-5.4 parts of salt, 24-25.8 parts of aginomoto, 28-31 parts of oyster sauce, 24-26 parts of light soy sauce, 10.8-12.4 parts of white sugar, 9.1-10.8 parts of chicken powder, 18-22 parts of ginger, 19-22 parts of shallot, 28-32 parts of garlic, 14-16 parts of salad oil, 1.8-2.1 parts of szechuan chili powder, 1.8-2.2 parts of anise powder, 2.8-3.2 parts of pepper powder and 1.0-2.2 parts of ginger powder. According to the dried vegetables sauce and the preparation technology thereof provided by the invention, the dried vegetables sauce is delicious, and has the advantages of being free of an additive, free of a pigment, free of an essence and free of a preservative; and the nutrient value of the dried vegetables sauce is improved.
